Wasn't a problem for me FWIW        

I've only done one track day and don't claim to be an expert, but on my bike with a stock rear shock and kickstand and centerstand both on, I was dragging knees on both sides with no problems.
I did remove the peg feelers and the few times the pegs did chirp on the ground was when I got lazy about body positioning.

Size-wise, I'm about as average as you can get (5'10", 32" inseam).

I'm guessing removing the centerstand is probably a good idea especially as you get better and the lean angle increases, but wasn't necessary for me on my first track day.
