Possibilities?        

I never came close with the 2007 engine either.

It was about 900 miles on the 2005 engine at the time. So maybe the clutch is still kinda grabby? Maybe no slippage before it grabbed? But it didn't seem like it 'snapped' up, just rose up rapidly.
I had both feet on pegs and was sitting upright so my weight wasn't forward, possibly center/rear then.
The street is uphill (overpass beginning), but not severely so.
According to the service manuals the 2005 has a different gear ratio then the 2006-2007 but I never got any info about it,

I did drill and set the idle screws on the carbs that hadn't previously been done on the 07 engine.
I haven't tried to replicate the incidence, so I couldn't tell you if it was a fluke or not.
