It was warm out yesterday morning -- mid 50s.

I just don't think I'm paying enough attention to it. I typically try to keep the idle RPM around 3000. Going to have to play around with it a little bit more. I'll post again if I have stalling problems in the future.

I went out one day several weeks ago with the choke on, rode a few miles, turned the choke off, and it proceeded to stall every single time I stopped in first. It would idle around 3000 and slowly creep down until it just stopped. So I might be overcompensating for that now, because it was a pain in the ass and kind of dangerous ...
