I guess I haven't really done my homework on estimating the value of those fairings. Thanks for the input!

Those fairings are pretty valuable.
I wouldn't go cutting them up. It's getting harder to find fairings for the F series bike. No, there isn't an aftermarket bracket (there isn't much aftermarket anything) but fabricating something yourself is part of the charm in making a fighter. It would sure beat cutting something that's worth a couple hundred bucks.
You could always make your own screen. Something here might give you some ideas:

Stock windscreen mount
So this is basically a money question. I want to mount the stock windscreen, but without the front fairings. Simplest option seems like cutting away all of the stock fairing except the mirror mount points so that all i'm left with is just enough plastic to hold the windscreen to the mount points.
However, since my fairing is in reasonable shape (glue repaired significant crack on one side only) I'm wondering if there is cheap aftermarket bracket (i.e $10 or something tiny) that would allow me to mount the stock windscreen and sell my fairings in mostly complete form? Thoughts?
