You aren't going to hit 110 on the 250 indicated unless you are the size of a horse jockey. Even then, the speedo will be over reporting at that speed. Mine tops out at 90 indicated stock, might be able to get a bit more out of it going downhill with a tailwind. That's with me being 6'4 and 170lbs.
As for your trip, the bike can cruise 60-80 all day as long as your ears can handle the scream. Highly recommend ear plugs for that distance if you don't want hearing damage before your first midterm.
